Nearly 20 years ago, we opened our first restaurant in Seattle. Since then, there have been more restaurants, more neighborhoods, and a whole lot more great people: chefs, servers, bartenders, bakers, and all of the people who make these houses what they are. And, thankfully, a whole lot more of you. Regulars, party hosts, late-night martini sippers - tables full of people we’ve been lucky enough to welcome over the years.
Somewhere along the way, ESR grew into something much bigger than where we started, and it felt like time for a name that better reflects who we are today:
One House Hospitality.
The restaurants you know and love aren’t changing. Neither are the people behind them, the food on the table, or the kind of hospitality we’ve always believed in.
One House comes from a pretty simple idea. Our restaurants have their own personalities, their own communities, and their own way of doing things. On any given night, our teams might be serving a tasting menu at How to Cook a Wolf or pulling a fresh Sea Salt Bagel from the oven at Rubinstein Bagels. Different places, different experiences, but behind it all, we’re one team. One House.
And that house includes you. If you’ve had a date night at Staple & Fancy, grabbed a slice at Ballard Pizza Company during a concert, celebrated your anniversary at Cortina, or been coming to happy hour at Tavolàta for the better part of 20 years, you’ve helped make these restaurants what they are today.
We’re so grateful you’ve been part of getting us here, and we can’t wait to have you with us for what comes next.
